WHAT YOU NEED

  • 120 mL (½ bottle) Vanilla PediaSure Complete®
  • 310 mL (1 ¼ cups) all-purpose flour
  • 125 mL (½ cup) brown sugar
  • 10 mL (2 tsp) baking powder
  • 2 mL (½ tsp) salt
  • 80 mL (⅓ cup) canola oil
  • 1 egg
  • 5 mL (1 tsp) vanilla extract
  • 250 mL (1 cup) fresh blueberries

HOW TO MAKE IT

  1. Preheat oven to 180°C (350°F). Line muffin tins with paper muffin liners.
  2. In a large bowl, mix all dry ingredients (flour, sugar, baking powder, and salt).
  3. In a smaller bowl, beat together Pediasure Complete®, egg, canola oil, and vanilla extract.
  4. Make a small “well” in dry ingredients to add wet ingredients. Whisk until combined, being careful not to over mix.
  5. Fold and evenly disperse berries into mixture.
  6. Using a scoop fill each muffin liner to ⅔ full.
  7. Cook for 20-25 minutes or until a toothpick comes out clean.
